AT GALLERY BY CHELE, WE ARE EXPLORERS.

We travel around the regions of the Philippines and Southeast Asia, discovering the intricacies of common local ingredients. We delve into the traditional cooking methods of farmers, fishermen and home cooks, learning practices and traditions that have been mostly lost to the modern world. We engage with the outside world, sharing the knowledge we have learned while gaining greater awareness on global culinary techniques, design and technology.

All that we do at Gallery by Chele stems from our intimate relationship with nature. Our love of the natural world shapes our values, frames our philosophies and influences our creative process. We are moved to showcase the beauty of the place we call home and share the gastronomic soul of the Philippines.

We strive to create a dining experience that is rooted in Filipino heritage but not bound by it. We believe in bringing ingredients, techniques, cultures and traditions together and weaving cross- cultural innovations that move beyond boarders. Things may have changed. But our drive remains the same.

THE NEW EXPERIENCE

From its origins as a degustation-only experience, Gallery by Chele takes casual elements that allows its diners a fun, relaxed, and memorable experience that now offers classics and other bites, small plates, and big plates a la carte; and, short and long tasting menus that can be customized with signature dishes and vegan and vegetarian options.

The approach to food applies as well to drinks. Now, classic and original cocktails; fermented and other natural beverages made with different craft techniques; and, both alcoholic and non-alcoholic food pairings make guests better appreciate the philosophy of Gallery by Chele.

Team Gallery

We are a creative and dynamic set of both veterans and young professionals that are passionate about good food, great service, and local ingredients. Our collective hard work and collaboration, alongside the partnership of chefs Chele Gonzalez and Carlos Villaflor – in the kitchen, in travel, and in business – creates cross-cultural innovations from a Spanish-European culinary background, a Filipino heritage, and the cultures, journeys, and kitchens that we have shared in between.

Stvdio Lab

The Stvdio Lab is a test kitchen and venue of educative collaborations with universities and institutions involved in studies of agriculture, local ingredients, culinary methods, food and technology, and the like. As a cross point of research and cuisine, it is an extension of Gallery by Chele.
